I have spent the past 25 years as a chef in a variety of great restaurants, hotels, catering companies, patisseries and fine dining venues. I also had the privilege of spending 10 years teaching some of Melbourne’s finest young chefs. My cooking career has seen so much diversity, specializing in International cuisine.
I have always had a deep respect for Thai people, Thai food and their beautiful country. I feel I have “arrived home” with my Thai family, and have been cooking nothing but Thai food day in day out for many years now.
After travelling to Thailand on many occasions, I have gained a solid understanding of traditional Thai food, cooking techniques and the complexity of flavours. With the guidance of my wife, Julia, who is an amazing Thai chef, I am very fortunate to say that I can cook Thai!
“Vanilla Orchid” Restaurant in Warrandyte Victoria has been my grounding; to spend my time cooking Thai food with our wonderful staff and doing exactly what I love. And with Julia running our other restaurant “River Kwai Thai and Burmese” in Clayton South there is never a dull moment…. our kids help to make sure of that!
Duncan’s Thai kitchen was a culinary journey: a documentation of an Aussie chef who cooks Thai, travelling the entire country searching for inspiration. To be taught by the local people from tranquil beaches to bustling Bangkok and from Isaan in the east to the mountains of the north.
